Chicken and vegetable soup with natural bone broth (keto friendly)

- 1 litre of chicken stock
- 1 tablespoon olive oil
- 1 medium brown onion
- 1 teaspoon crushed garlic
- 1 cup broccoli
- 1 cup cauliflower
- 1 cup eggplant
- 2 tomatoes
- 100 grams frozen spinach
- 6 chicken drumsticks
- Natural beef flavour bone broth by Australian bone broth co
- Pepper to taste
Directions
1. Sauté onion and garlic in a saucepan until brown
2. Add chicken stock and bring to the boil
3. Chop up all vegetables and add to the liquid
4. Add the chicken drumsticks
5. Bring to the boil then turn down heat and simmer (with lid on) for at least 30 minutes, or until chicken and vegetables are cooked thoroughly
6. Take the drumsticks out and shred the chicken off the bone. Add the chicken back to the soup
7. Serve soup into a bowl and add one teaspoon of bone broth or add until desired taste is achieved
8. Season with black pepper
9. Enjoy!
You can add any vegetables you like and also can replace the chicken stock to beef etc. I would never have thought to have both chicken and beef together but trust me it is delicious and so hearty.
